Noah, enjoyed hearing Shiuwen talk about mouthfeel and texture of Taiwan oolong, always special to hear this, along with the hilarious exchange you two have. I too find porcelain gaiwan so neutral to be too neutral with many oolong, not enough heat, although it can provide a baseline to start brewing new ones, to then transition into a particular clay teapot to really bring out the body, aroma and flavor.
