The producer, Mr. Konishi, uses only organic fertilizer and does not employ pesticides.
This is a sencha made using the Shizu-7132 cultivar, famous for its special fragrance of Japanese sweets. The scent of the dry leaves is rich and sweet, already a veritable pleasure.
Infused, this tea has mouth-watering aromas, and in the nose it is easy to recognize the sweet fragrance of the Japanese sweet made with pickled cherry tree leaves, but also notes of butter and toasted bread. The confectionary aromas then come out in the mouth, although the attack is very gentle. There is no astringency. A subtle umami combines smoothly with the aromas of sakura cherry tree leaves, leaving a delicious, sweet aftertaste in the mouth.
The earth and climate of Moto-Fujikawa in Kawane seem to do wonders with the Shizu-7132 cultivar, the characteristics of which can sometimes be difficult to bring out clearly.
