My example of the 2000 Red is dry and astringent with a deep yellow / orange broth that is both sour and harsh with bitterness rounding it of... A clear case of arrested development due to overtly dry storage or some sort of mid aging calamity... The fact that it came wrapped in plastic raised alarm bells but one perseveres and sometimes it's just plainly a bad scenario...
Friends I've shown this to and shared a some with say it's salvageable so the strategy now is to air out a quarter of the cake to see how it performs over a month while the rest gets a new jacket and goes back to sleep in a dark slightly humid corner of the cupboard...

I find the Taiwanese storage of the cake I have to be very clean. It brews up incredibly smooth, almost too smooth for my tastes. I tend to like a little more punchiness. Unfortunately, the Ohio climate, especially the colder months, tend to cause a slight storage crisis as well.

Do any of you steep your tea through out the day? I hear about people leaving their leaves in their gaiwan and just have tea throughout the day. I'm curious!

@klepto I will not think cold brewing PE would be a good idea... My soul just kinda shivered when I read what you wrote...
