One thing that has not been mentioned and which I am still wondering about: some people say(among them your Laoshi) that it’s only Hongshui Oolong if the the tea soup is red(-ish), other traditional tea makers I have talked to say it only refers to the making technique and not necessarily the colour of the brew.
Actually, that same maker brewed a vintage traditionally made Oolong from the 80s for me which had after all this time still a golden yellow colour. It was delicious by the way
