The bonavita is back in stock at Teavana. There is also a promo code TEAFIRST, which is another $10 off. Less than $40 plus free shipping is pretty awesome.

Got me this beauty in a black friday sale: https://ifworlddesignguide.com/entry/20 ... da-the-pot
Is all the rage in Taiwan at the moment, and Costco of all places had it!

Have yet to find a more beautiful one…

It is very quick to bring the water to a boil!

Yes all the way up to 212f, incrementally. I have one very nice calibration.

Where do you set/see the temperature for the Balmuda kettle? Looking at the Amazon listing as well as the link above, I see no display or buttons to set.

Mine either doesn’t have that feature either, or I haven’t found it!? Maybe Victoria was referring to the bonavita?

Anyways I don’t need that feature, old school observation and listening will suffice. If in doubt one can always wait for the water to cook down.

I do need that feature, because too much of my brewing is distracted brewing. It's a very useful crutch for the attention impaired.

One thing worth noting about the Bonavita - great as it is - is that it's not great if you want a rolling boil.

The PID brings temperature up to setpoint without overshooting, so when you set the temp at 100C the last few degrees are kinda slow and it never seems to reach a violent boil.

That is true--it is not enthusiastic about boiling, and one of my pair of them shows 'high' and stops heating just as it hits boiling, as often as not. It's not perfect, but it is pretty nice.

Is there a difference that effects steeping between a "rolling boil" and what is just before that, bubbles, steam, etc.?

+1 The bonavita pauses a couple of times when water is getting close to the desired heat. When impatient, I will use a setting of higher temperature than desired for the first infusion (and pull the pot off when it is at the temperature really wanted; or for boiling water just not fill the pot much for the first infusion.
