Makes sense – and makes one sad… I see the same in my job, quality work is rarely appreciated and paid appropriately for in Taiwan. They picked up a lot of things from them, but not the senses for perfection and quality. Which results in sometimes more lively and fragrant results, as opposed to Japanese austerity which sometimes goes to far in my opinion.
A lot of high quality restaurants have similar issues, not a lot of people here are willing to pay for it.
