How is cold brew tea different from regular tea which is prepared with boiling water? If someone wanted to use lipton black tea from those little bags or lipton black tea which comes in loose leaves, would the acids and oils not be released like cold brew coffee?

Not sure why anyone would want to use Lipton tea

Just like with coffee, temperature has an impact on how efficiently various compounds are extracted in tea. With tea it mostly affects the bitter flavours, with colder water giving less bitterness and astringency. Cold water also tends to de-emphasise "darker" flavours, while bright flavours seem to be mostly unaffected (although still needing more time than with hot water, obviously).

But can drinking very concentrated/strong cold brew black tea even at this cause gastric problems in some people?

No idea, but if there's a risk, I'd say it's going to be a lot lower with cold-brew. Also, going with something higher quality - and less broken - than Lipton will likely also diminish any unpleasant side-effects.

What might be higher quality than lipton and if its higher quality than lipton assuming its very concentrated/strong cold brew black tea, will it be the same risk or not? Will loose leaf black tea be any different than using those little bags that tea comes in lipton that are used to dunk?

Almost any option is better than Lipton.

Lipton is essentially the folgers or Coors of the tea world. You cant go anywhere but up from there.

They are definitely the leading brand in terms of sales in the US. But that doesn't equate to quality

For quality camellia sinensis and also herbal teas you can contact Sinensis out of Mexico, Salvador can steer you in a good direction for El Salvador sources.
