@Benjaminis absolutely correct. Spring bottom up, Winter top down (these are rules of thumb, of course) but with climate change the differences between Spring and Winter are becoming much harder to detect. Growers and tea makers producing a "fresh" style tend to harvest earlier whereas producers making an older style, like my laoshi, harvest much later (BTW I like and carry both styles).
