What's important to note is that aged white teas often have an addition step of steaming. This makes the leaves soft to allow them to be compressed into cakes for aging. I would describe the taste as follows:
- New white tea: fresh & floral
- 2-5 year old white tea: fruity & smooth
- >5 years old: thick texture, herbal medicine
What I love about aged white, is that it can make lower grades of white tea taste really good after 2-3 years only. I had this
shou mei cake from teasenz. You can see the raw material is low grade (which is why the cake is so cheap), but the taste is amazing. Aging white cakes therefore adds more value to lower grades, relative to high grade silver needle.
