Still lovely Tsuen matcha, in the Flower of Forgetfulness....with tasty foam thick enough to slowly puddle back in the center of the bottom after drinking.

Just got into matcha, this is premium Yame matcha from tea masters. They were out of the ceremonial grade. The chawan was made by Alex Dunn who I THINK is a member here. I need a good chasen, to make better froth. This was however very savory and sweet.

I’m ordering the highest grade of ceremonial matcha from Tusen (through Ocha) as well as their #2 grade one which I forgot the name of both also two high grade ceremonial matchas from Sazen tea
Also ordering a hand made chasen from a Japanese master on Etsy. Really hope I achieve the similar results as ya all

When EMS shipping from Japan to the USA shut down a year ago I began exploring options for ordering matcha that was already here. I bought a 100 gram bag of Hoshinotsuyu from Setsugekka, which is located in the East Village of NYC. Someday I’ll be able to go there in person for a matcha-making lesson and maybe a bowl of koicha or a matcha tasting. In the meantime I’m enjoying the Hoshinotsuyu matcha at home.

My chasen, which I purchased from o-cha, is also hand-made, in Japan. I’m curious to know more about the one you purchased on Etsy. Can you post a link to the shop?

@Janice, do you find the type of glaze and clay of the chawan ever impact the flavor and aromas of the tea? Also, do you find the type of material used in the whisk matters?

I wanted to buy the one from O-cha as well, BUT this one enticed me more due to the level of craftsmanship involved, this is very similar just made by a diffrent artist Tango Tanimura.

I know this was directed at Janice but I also wanted to chime in as Ive had some experince with this. For me the inner glaze of my current chawan does impact the flavor slightly due to the fact of its smoothness. I think it makes it richer. For a rough inner glaze it seems to be a bit minerally. As for the wisk I hope to test that out with mine.

Already put in my order from Ocha and Sazen but I had to have ultra premium ceremonial grade matcha in person at Tea Masters. It was so good I decided to purchase one. It is Seiju ceremonial grade which is a mix of Okumidori, Asahi, Saemidori.

The Seiju matcha from tea masters makes a beautiful koicha! Super thick and rich. Also smooth and very little if any bitterness.

last post. I wanted to do it in seperate posts so that nothing gets jumbled about. So before my artist made chasen arrives I decided to get a work horse one in the mean time. the result was spectacular.! The Seiju ceremonial matcha from Tea Masters in Los Angeles produces a silky layer of foam. A little tip given to me by the owner of the store was that to get such results, its best to use warm water rather than cold. But nothing higher than 50 degrees celsius. Bottom picture is to highlight the beauty of the chawan which was made by Alex Dunn.

I have 2 chawan both of which I purchased from American craftsmen who use food safe glazes and wood fired kilns. One has a glossy finish and one is matte and slightly textured, but smooth. I don’t notice a difference the way I do with unglazed pots for tea brewing. I have wondered about raku bowls. Supposedly they’re not food safe and I’m not sure if that means the glaze dissolves a bit in the matcha and affects the outcome.

I only own one whisk, which is made from bamboo in the Japanese tradition. It compares well with the silicone coated kitchen whisk that I used initially. I have TAD so I’ve had to pull myself away from researching chasens and get back to work. I’m careful with my chasen but I know I’ll need to replace it eventually.

Have you purchased one of these? Apparently the official name is ‘chasen tate’. I soak the chasen to soften it before use, and dry it on one of these after.

Finally got my order from O-cha in I have the Chiyo mukashi and the top of the line Taiko San. I’m trying out the chiyo mukashi first as I wanted to start off with that. Wow quite sweet and savory with some chashew notes. Also bought a wonderful new chawan from artistic nippon which allows me more room to wisk. Speaking of whisks I bought one from koto tea on Etsy(second picture) but as you can see it is so beautiful and light weight I’m afraid of the splines breaking with my vigorous whisking. For now I’m using my work horse chasen which I also got a holder for(first picture)
