I've had a type of green tea in Asia that has a rice taste to it. Nutty and full. Anyone know what this variety is?

If by Asia you mean Japan it may have been genmaicha, which has literal rice in it.

That would be the obvious thing.

could also be a Chinese green tea. Some have this kind of quality which is reminiscent of rice, but comes from the pan frying process.

A very difficult to source ‘roasted sencha’ from Kagoshima Co (because they don’t make every year) is very chestnutty nutty sweet potatoe umami rich, both in aroma and flavor, with hints of evergreen. Ohhh so good.

I would bet on a scented tea where « sticky rice herb » is used to give its flavor to green or white tea. This type of tea is a speciality from Thailand, Laos, or the area.
I’ve had some and it really has the smell and taste of sticky rice. Surprising but quite nice actually.
Please read here for an example:

I have drunk this tea in Chiangmai. For a session or two the novelty was quite nice but that was all I wanted. Cheers

Yes, same for me. It’s a present we received from friends living in Laos. The name of the tea was already saying that it wouldn’t be an everyday tea for us.
But it was still worth the experience. ;)

I just received some tea from a friend in Korea that is made with brown rice, 현미제주녹차 (brown rice green tea) from Jejudo. It tastes like the burnt rice at the bottom of a pot after you cook rice, very tasty and the brown rice quality is high.
