Re: High fire TGY suggestions?

LA tea club members and I have really enjoyed sharing tealifehk High Fire Tieguanyin Oolong from 2014+-. It is malty rich aromatic and complexity with no bitterness, and very reasonably priced for the high quality. Thanks Victoria! I'm amazed that tea has held up so well. The family that produce it...

Re: What Green Are You Drinking

Finished off some sejak my girlfriend picked up in Seoul (Osulloc). I brewed up the last of the bag and there was a fair bit of crushed leaf. At 75 C (approx), I had an amazing session! I brewed 'gongfaux' style with relatively short infusions (and lots of them) and it was the best session I've had ...

Re: Anyone know what this is??? (plastic in cake)

Can't comment on the aroma without trying the cake, but that green string is extremely common in pu from around 2000. That cake also looks like it was pressed by Xiaguan between iron plates...wonder if it's a T8653?

Re: High fire TGY suggestions?

Hi Hannah! This tea should be exactly the same as the tea you got from Tim at MTR back in the day (but more recently roasted): https://www.tealifehk.com/products/hong-kong-roasted-high-fire-tieguanyin-oolong I'd also suggest this tea to you: the current batch is really very good. It's not quite as h...

Re: What Oolong Are You Drinking

Then with aging re-roasting would be necessary, but not possible if high fired. What are your thoughts on methods of resting versus aging of roasted oolong? In my experience the HK traditional roasted teas are over-roasted, which means re-roasting is probably not advisable, maybe a slow waking up a...

Re: What Oolong Are You Drinking

Glad to hear you're enjoying the everyday tieguanyin @vVictoria The family roast tieguanyin throughout the year, and I think the current batch is better than the last one! The HK High Roast tieguanyin doesn't hold up quite as well because of its higher roast level. I've actually never tried the eve...

Re: Vietnam Oolongs

I have a half kilo of Vietnamese oolong in my personal stash: I think I'll have some now after reading this thread through again  A friend of mine was in Taiwan last year and sourced some excellent high mountain oolong. She's just getting started in the tea biz and I was very impressed with wha...

Re: Questions about storing tea in fridge

I have two unopened packs of sencha in the fridge now: I seem to get around to sencha after Chinese greens since I don't refrigerate those. I've had packs in the year for two years and the tea was still good. Didn't notice it deteriorating any faster. I let the pack warm to room temp and then open. ...

The little bits are also good for big pot brewing: they'll settle to the bottom. Good way to use em up!

Re: Taiwan/Hong Kong Trip

I'm from HK (obviously) and I've noticed I'm immune to noise at restaurants. Was in the pool earlier and my gf complained about some noisy kids. I had completely tuned them out. I told her if she hadn't mentioned them, I wouldn't even have noticed! HK has some of the best Chinese food on the planet ...

Re: hei cha brewing methods

Hei cha is excellent boiled, as well, and this includes pu! Even young maocha is boiled in Yunnan. I am really not a fan of flash steeping hei cha or pu and tend to rinse twice and start infusing at 40 seconds. I tend to use 8-10g for a pot of 140-250ml, and adjust time based on darkness of liquor.

Re: Patina development

For those who don't know, I also collect and sell knives and swords: I polish metal fairly frequently with various grits of polish (and sometimes I even go all the way down to 200 grit and then work my way back up)! Rubbing a microfiber cloth across clay is basically polishing it, so if it's too hig...
