Actually, cold brewing high quality gyokuro and or sencha with ice cubes takes just +- 30 minutes. Basically, the time it takes ice cubes to melt. Delicious;

I was reading about chawans and came across the Tsutsu-jawan. How is this used? Do you whisk in the chawan itself or in a separate bowl and then pour in? It seems like it would be hard to whisk in such a tall narrow Chawan.
