Sae Midori Sencha Kirishima Organic Sencha Yutaka Midori Sencha Chiran Sencha Uji Shincha Kirameki I was going to order 2 last night, but was greated with $23 shipping for $45 of tea. Glad to hear others come to the same conclusion. It looked very localized. I would assume that mold would permeate through a few more layer and not brush off so easily.

Tea tasted good, regardless, lol.

Weird stuff in 8582 cake. Anyone know?

Bought this TWL tea the other month and overall, I'm really happy with it. Good price on a 2008 tea. Its has enough age to smooth it out, but it still has some power to it. I just ordered another 3 cakes. I can drink these with abandon and if there is some left in 10 years, might be really nice. I p...

Re: Water Water Everywhere... What’s Your Water?

I do want to point out something though. I'm a little concerned about contamination of these roadside springs. I came across this article from Penn State extension https://extension.psu.edu/roadside-springs Basically, they said that 94% of the springs they tested failed at least one criterion for wa...

Re: Water Water Everywhere... What’s Your Water?

I've been playing around with CaCO3 and NaHCO3. I used the Leone Spring water (19ppm) that I described above. Most methods use Epsom salts and baking soda (MgSO4 and NaHCO3) but real water is mostly CaCO3 from stone. The solubility of CaCO3 at neutral pH is very low, though. Adding most acids would ...

Re: Water Water Everywhere... What’s Your Water?

I just want to share with people my sources of water for brewing tea. There are many natural spring water than can be collected for free. These water are filtered through the earth and they are safe to consume (we boil the water anyway). It's way better than any tap water or bottled water I have in...

Re: Spring Tea Harvest and making of Oolong tea from San Jose California

It is possible to grow teas in Northern California. I have a small tea garden in my backyard. This year is my 3rd year growing them. I am only able to make 40gm of Oolong tea with the first harvest. The aroma is good but the taste is average at best. However, it's 100% organic, safe too drink, and ...

Re: Water Water Everywhere... What’s Your Water?

Wrote a post on the challenges of water. https://teasecrets.home.blog/2020/04/03/water-a-wicked-problem/ This is basically less of a report on any findings and more a report on the roadblocks and difficulties I've had understanding how water works. I've made almost 50 water recipes in the past year...

Re: Best water for brewing tea is Natural Spring Water and it's free

This a really cool tool! Thanks for sharing. Looks like there's a free access spring about an hour from me. Leone Family Spring in Glenrock, PA. They take donations and use the money to get the water tested. It's at about 30 TDS, so a little soft, but I'm excited to give it a try. 2hr round trip for...

Jiufen tea house.
A bit pricey, but the tea house is truly spectacular, especially in the setting of Jiufen.
Any photos of the tea house and setting? The tea and table setting are lovely!
It was hard to capture. But. ..

Re: What Oolong Are You Drinking

I am sure you have tried something similar, sounds like a made up name hinting it is some sort of bug bitten oolong... gui fei is concubine(oriental beauty), fen seems to me an allusion to the place of the teahouse, which is in Jiu-fen ;) By the way a very nice one in this otherwise very touristy p...

Re: What Oolong Are You Drinking

My first trip to Taiwan! Jiufen tea house. First time having Gui-fen. What a delicious tea! It has the backbone of good gaoshan, strong buttery aroma, with the sweetness and complexity of eastern beauty. A bit pricey, but the tea house is truly spectacular, especially in the setting of Jiufen. 20200...

Re: What Oolong Are You Drinking

Opened my second to last pouch of last spring's Hehuan Shan (2018). I probably need to finish these off before I risk losing them. I've enjoyed this tea. It's quiet and subtle, but very appealing.

It will have to rest for a few days to open up, but I really love the look of a full tea tin 😁

2003 CNNP Yi Wu Xheng Shan Raw from YS. One of the better samples I've received from Yunnan Sourcing. I think I'm going to get a full cake or two of this, especially at the $120 price point. Pretty smooth, with just enough astringency and bitterness to give it a good kick. Not much smokiness, but th...
