Re: What Green Are You Drinking
Still enjoying Chinese greens while waiting for the 2019 versions of my favorite Japanese greens to arrive at O-Cha. Today - tai ping hou kui from Tea Trekker. It’s good for at least 5 infusions. I love the crackle glaze on this celadon cup that I purchased from a kiln In Chiang Mai. The glaze is ma...

Re: TeaLife.HK -- Classic HK-style Teas!
I haven’t ordered in a while but I’m preparing to. The owner has been posting sale information to Facebook.

Re: Your day in matcha
The one I used is cooking matcha, but you can use a better one if you don’t like it prepared traditionally. That’s good to know. If I like matcha lattes I might order some cooking matcha. The price is so reasonable. I just checked o-cha and their cooking matcha is $27 for 300 grams. At that price, ...

Re: Your day in matcha
I’ve been trying different matchas. Maybe if I don’t enjoy one prepared as intended I’ll try to make a matcha latte.

Re: Your day in matcha
Elise Your photos are so elegant. Are they from a tea ceremony? This is my latest “foam” achievement. I used 160° water and a new matcha, O-cha Kaoru Supreme organic Matcha. A little more bitter than my favorites, but somehow the bitterness is not as unpleasant for me as the bitterness of sencha. 4...

Re: What Green Are You Drinking
For some reason the thes-du-japon video that I watched just this afternoon is now unavailable. He didn’t roast the tea for nearly that long. First step was to heat the tea over a low flame without stirring or moving the pot. Then he moved the pot back and forth for a minute or two. That was more tha...

Re: What Green Are You Drinking
Room temperature brewing of the ‘bitter’ gyokuro didn’t reduce the bitterness enough for me. I dug out my Horoku, a pot for roasting tea, that I purchased from thes-du-japon several years ago. The roasting helped reduce the bitterness, but I need to work on my roasting and brewing technique. I’ve wa...

Re: What Green Are You Drinking
Continuing on with Chinese greens by brewing Tea Trekker Long Jing in a Shawn McGuire gaiwan. Shawn was experimenting with a pebbly green glaze that looks pretty and spring-like, and feels good to the touch.

Re: What Green Are You Drinking
Brewed in my kobiwako kyusu from Hojo. Ever since I came across someone brewing gyokuro for 10 minutes with room temperature water (and being very impressed with the result), I've been exploring lower temperatures with Japanese greens a lot more. I think sencha does taste better with little heat, s...

Re: What Green Are You Drinking
Again, part of the fun of drinking Chinese greens in the spring is using teaware that doesn’t work well with Japanese greens or yancha. Today I’m drinking Yu Qian An Ji Bai Cha from Tea Trekker in this beautiful Hong-Seong Il pot. The copper glaze resulted in beautiful shades of purple. CACE3B99-21D...

Re: Anyone ever bought Chinese greens from Tea Trekker or Seven Cups?
I’ve bought and enjoyed Chinese greens from both Tea Trekker and Seven Cups. I tend to shop more frequently at Tea Trekker because they’re so close to me that I often receive my package the next business day. I used to really enjoy buying from Jing Tea Shop but no matter how quickly they sent the pa...

Re: What Green Are You Drinking
I skipped Chinese greens last year and I’m pleased that I’ve ordered my old favorites this year - TPHK, anji bai cha and long jing. It’s also an excuse to use some of the tea ware that doesn’t work for Japanese greens. I started with the TPHK since the shape adds to the interest, the way that whisk...
