Part of what makes Dan Cong challenging, at least in my experience, is that its a very finicky tea to brew. It doesn't really do well western steeped or grandpa style. I'll be ordering from Yuuki-Cha again this year. They have a pretty large selection and I like to try a different sencha every year.
