Re: Looking for Yuzamashi info
Here are some yuzamashi I own. I personally like the one my Taisuke Shiraiwa best. Among other things it has these chips in the bottom that I like to focus on. Re: Looking for Yuzamashi info
Bok, The Yuzamashi is used to cool water before contact with the tea. The chahai is for pouring off after steeping. Are you referring to the Yuzamashi? Yes, but it can (and probably will by many) be used either way... ? I never would. I’ve heard that yuzamashi are for preparing gyokuro only, not se...

Re: Coronavirus
In a sense it's odd we're not hearing people discuss the issue of what Chinese people are going through. They've extended and broadened the New Year's shut-down until the 10th, and of course things are creepier in the epicenter where all vehicle traffic has been shut down. That part is really kind ...

Re: Coronavirus
brutusK , that’s reassuring to hear on all counts. As far as how my family member was treated, she was treated well. I only wish there was more known about how to treat the chronic phase of the disease. I also wrote that while half asleep so I don’t know that I was very clear. I feel like we forget...

Re: Found some really old tea (19 years!) Can someone identify?
I would also encourage everyone never to take any givens persons advice on something as the ultimate truth - always see for yourself and keep an open mind. I agree. I think we might be surprised by how different our tea is if all of us sat down and had tea with each other. I've seen fads come and g...

Re: Found some really old tea (19 years!) Can someone identify?
Lifting the lid may increase the flow a bit, especially if the lid is tight and the air hole very small. A quicker pour could mean a shorter infusion. Maybe that could make a difference in the result. Thanks for the explanation. That might be it, something is definitely happening. I always thought ...

Re: Coronavirus
As for the accurate reporting of numbers, my personal experience with a family member who acquired West Nile leaves me feeling underwhelmed by the reporting of county health departments and the CDC. Her case was not reported to the CDC and did not make the county tally because she had antibodies for...

Re: Coronavirus
Out of all places where I would have looked for a virologist, TeaForum is not near the list... But hey, everyone drinks tea, so... Indeed the world is small. Last month I shared a plate of BBQ with the gentleman who established the Office of Health Affairs within the Department of Homeland Security...

Re: Water Water Everywhere... What’s Your Water?
My (oversimplified) take is that these recipes are essentially trying to add Ca(HCO3)2 without adding CaCO3. The HCO3- comes from the baking soda, while epsom salt supplies Mg+, which seems less desirable then Ca+, but easier to add. What taste difference if any is there between calcium carbonate a...

Re: Sencha: what water temp do you use for the second cup?
leth There are multiple problems with assuming Japanese green teas can be brewed just as well using a gong fu cha method, or that Japanese green tea quality can be assessed using the same methods used for Chinese oolongs. These teas share a common horticultural ancestry but that is where the compar...

Re: Sencha: what water temp do you use for the second cup?
I definitely have more intuitive, practiced approach to tea. I remember when I first began teaching GFC classes I took measurements of my parameters, something I had not done in literally a decade or more. I was astonished by how far off my actual parameters were from what I thought I was doing! I w...

Re: Sencha: what water temp do you use for the second cup?
faj , I tried taking temps just now but soon realized four things: 1) my water temps are way cooler according to this IR thermometer than I ever thought so I may not be a good candidate for testing. Out of the yuzamushi, my water was around 50°, at least 10° cooler than I thought I was doing. 2) I ...
