Adding powdered L-theanine to puer

I have been reading a lot of articles on tea lately on pubmed. Here's an interesting one that compares levels of caffeine an L-theanine across different types of teas: Theanine and Caffeine Content of Infusions Prepared from Commercial Tea Samples Lots has been said about L-theanine and tea before. ...

Re: Xiaguan BBQ Chicken recipe experiments

As an update here, I'll be continuing on soon with experiments using my new meat syringe. I just wanted to take a break from eating so much chicken for a couple days :D I am fascinated by the discussion here around the cha gao and grateful for your extra detail EarthMonkey . I don't have much to add...

Third experiment - Simple marinade vs no marinade For this, I marinaded 1 chicken thigh in the tea liquor for 12 hours. I also cooked a control-thigh with it to compare. ... The tea-thigh had the most subtle hint of sheng. even though you didn't get much tea flavor, it still looks delicious. my com...

Re: Brewing Yaupon gongfu style

Interesting, I had to look it up as well. Another strange yet to any European familiar leaf that can be prepared as a tea: Birch. Good for something obviously, but I forgot what it was... I think the only satisfyingly drink of what would be classified as herbal teas is a certain kind of Berber tea ...

Re: Brewing Yaupon gongfu style

My understanding is that its taste is meh, like clumsily roasted leaves. However, this is based on one person’s opinion. They followed up by saying it was a novelty. So, again, I’ve passed up on trying it. How would you describe the flavor and aroma? Very interesting Baisao ! Do you remember the le...

Re: Xiaguan BBQ Chicken recipe experiments

I'm wondering if you might have better results with a blend for your chicken. Perhaps try a puerh/lapsang souchong blend? Maybe two parts puerh and one part lapsang souchong, so the lapsang doesn't overwhelm the puerh flavors, but you get more smoke. This is a good question. I don't have any lapsan...

Brewing Yaupon gongfu style

Hi all, I brewed Yaupon gongfu style recently and wanted to share some pictures. Typically, Yaupon is brewed western style. At least, this is what I've seen from vendors. The leaves are very small and dry. This is a "medium" roast: https://i.imgur.com/ctFb4Lp.jpg?1 The first steep is light. The flav...

Welcome to TeaForum powersnacks. We have several members near you, maybe one day you’ll all meet up.
Thanks for the welcome! Yeah, I'd love to give it a shot. I only recently found out about the NY Tea Society, which might have a couple folks from here as regulars :)

Re: Xiaguan BBQ Chicken recipe experiments

This interesting topic reminded me of a pu’erh paste EarthMonkey made last year here in LA. He posted about it at LATS. He boils the pu’erh and strains it for a long time, making a pasty reduction to be used in soups, stews, sauces etc. and here is a good video of pu’erh paste being made; <snip> Th...

Interesting experiment!

Might work well as a dipping sauce. Boiled tea instead of coffee for red eye gravy.
I really like this idea. I will try it soon if someone else doesn't beat me to it

Day 2 experiment failure log Today was a failed attempt at marinading the chicken with tea. Everything worked fine, but I made a poor fusion chicken teriyaki. I did not get smoke or flavor. https://i.imgur.com/xxTQIbA.jpg?1 I am keeping this post shorter because I'm more focused on tomorrow's attemp...

Re: Xiaguan BBQ Chicken recipe experiments

awesome, thanks for sharing this. i have never seen something like that before. 👏 i'm wondering how much of a flavor impact the tea makes with such powerful spices present. do you think, aside from smoke, you got much tea flavor? if you also happen to be wondering this yourself, maybe try cooking t...

Re: Introduce Yourself

How long have you been drinking tea? I've drank tea my whole life, but I've really become more mindful about it within the last year or so. What kind of tea do you drink? I mainly drink raw puer tea. But I have been expanding my tastes quite a bit. I love Yunnan Gold and some Chinese green teas. I ...

2008 Xiaguan "Dream of the Red Chamber" Raw Pu-erh: https://i.imgur.com/ReXlmiu.jpg?1 I have been trying in earnest to understand the heavy mesquite flavors of this tea.
