Glad that you are having a good time, pedant. ? for you, "Are you seeing a lot of one-of-a-kind pieces?" Japanese potters are very good in their techniques, they can reproduce the same pieces over and over again with amazing precision. It can be mesmerising to watch. I remember doing that in Kyoto.

if it is wood fired (fired at high temperature from 3days to several weeks), the clay will become as sealed as a glazed pot.

The cleaning effect of rinsing is probably more cosmetic than efficient… I do not rinse any tea, except Puerh. If I suspect the tea not to be good enough I simply do not drink it, after all I have enough good teas, to waste my increasingly limited time on them. Instead of rinsing to help open up, I ...

I tried a few of their teas earlier on in my journey - a concubine, an alishan, and a roasted dong ding - and while they seemed good then, they seem pretty average now. Not bad, mind you, but far inferior to what I've gotten from Tea Masters, Taiwan Tea Craft, HY Chen, etc. Makes sense, Teamasters ...

Lishan winter harvest from 2016. Freshly opened a pack and the tea is still excellent, even after a year. I only buy very little spring tea as I prefer the winter harvest and stock up on it.
Tea that good is best finished in a week before the goodness fades.

Lots of those in Taiwan as well, they like to build their webs over roads and paths, so beware when the first to walk in the mornings… At least they do not come into the house like the Laya, Taiwanese wandering spiders. There is a difference between bad tea and your worst tea. My worst tea is not necessarily a bad tea. Just less than my best. I would not drink bad tea, but I will sometimes opt for a less good tea.

Well, here in Taiwan things to avoid before having tea is hot pot! And most fruits and sweets. Chocolate is especially bad. At least for the less oxidised, roasted teas. The heavier, roasted, aged or black teas are more forgiving in that sense. If I know I have had some of those foods I pick another...
