Re: What makes a tea "clean"?

The term "clean" is often thrown around in the tea community without being clearly defined. I’ll go ahead and touch the third rail. I’m sensitive to cha qi and believe that these sensations are entirely chemical, rather than woo. Therefore, it is an interaction that is occurring between my body’s c...

Re: old tins: keep, toss/recycle, or donate?

I suggest recycling them. They are not good IMO for most teas. Some puerh teas might be fine in them but most teas do best in Mylar bags. There are some advanced scenarios, like letting a tea breathe in a ceramic jar, but stick to odor free glass or Mylar until you feel like digging into the more es...

Re: newbie stuck - what next?

100ml seems like barely enough, but with 3-5 infusions, you're looking at up to 2 cups and my brains is having difficulty accepting such math, hah. I end up using almost 1 liter of water per session when brewing Taiwanese or Chinese teas in 60-100ml teapots. Some of this water is lost in warming bu...

Re: newbie stuck - what next?

caj , if you want to try brewing GFC style I recommend Inge Nielsen's pots. The glazes are neutral, the pour is fast and clean, the spherical-ish shape is good aromas, and they are affordable. I like to use one of her teapots for trying out new teas because the teapot won't effect the aromatics or ...

Re: The Porcelain Thread

My Inge Nielsen pot arrived today. Naturally I had to try it out immediately. The only Chinese green I have right now is a small bag of Lu’an Gia Pian, which I’m not familiar with. I’ll need to experiment with different times/temperatures but I know from my first session that the pot is a pleasure ...

Re: newbie stuck - what next?

Thanks for letting me know about the ketchup/vinegar/bell pepper flavors, caj . I haven’t encountered those but certainly some other unexpected flavors. Most of my tea making is done using Taiwanese style GFC so I went with the Flair 58 for my espresso maker. I automate things all day and enjoy anal...

Re: newbie stuck - what next?

Thank you all! I will start with the teas then. I don't know yet what I like and don't like, will need to taste a few before I can start asking. I've recently started drinking coffees and began by exploring what flavors appeal to me and what propertied do not. For example... Likes: * medium to thic...

Re: newbie stuck - what next?

In line with Ethan Kurland : what are you looking for from tea? What flavors do you enjoy? What flavors are abhorrent? We could help steer you towards a style of tea that has the qualities you’re seeking and away from qualities you dislike. From there, the identified teas can lead to the ideal metho...

Not a dessert but a salad. I take spent gyokuro and toss it with Japanese rice vinegar and a light sprinkle of toasted sesame seeds.

Re: Which water (hardness) to use for Da Hong Pao, Tie Guanyin and Siji Chun?

Hello everyone! Could someone let me know water of which hardness I should generally use to get a fairly authentic taste out of Da Hong Pao, Tie Guanyin and Siji Chun oolongs? I use filtered water for my standard teas and Black Forest (about 30 ppm) for green teas. Would that be too low of a minera...

Re: Avoiding and dealing with limestone buildup inside kyusu

Not all minerals lead to lime scale. It’s primarily calcium carbonate. This is why water softeners can exchange the calcium for sodium yet not have scale accumulate. I use 20% acetic acid in my photo chemistry and it is hot stuff. I can smell it though the chemical resistant lid of the glass bottle....

Re: Teach me to brew oolong

GailC, how may grams of tea did you use? How many ml is the teapot? I’d expect to see more wrinkles on the leaves and the edges less torn. Was this in balls or pellets? 3-4 grams, 250 ml pot. I guess they would be balls, not really sure what the difference is. I checked the leaves closer, the tears...
