Re: Oolong Vendor Topic

chofmann not sure if that is a good idea, 3-4 years is usually when Taiwanese Oolongs turn a bit boring, before getting interesting again at 5+ years. 2 years I consider rested tea, 5years is a young aged tea. We'll be tasting it every 12-18 months, but I'll definitely take into consideration your ...

Re: Oolong Vendor Topic

Have ordered from Chen directly, his roasted teas are all excellent, personally I think his strength is in the roasting, so I like his medium and heavy roast best. I think his heavy roast is best drunk after letting it rest another 1-2 years, or longer. Not bad straight away, but better with some t...

Re: Some reflections and some new things learned on a trip to Taiwan

The ethical considerations in tea drinking are not much dwelt upon by most consumers. (Are the ethical considerations of any consumption much considered by most consumers?) But tea cultivation and production do have impacts on the environment, on social structures, and on the economy and we as tea ...

Re: Kagoshima Tea Farmers Tasting in Los Angeles, December 9th

I'll throw a couple more in. 1. Tillerman posted an interesting article recently about the appellation of various Taiwanese oolongs, but how do the kagoshima farmers feel about a similar process toward Matcha? There is currently (to my knowledge) no (enforced) system separating different types of ma...

Re: Kagoshima Tea Farmers Tasting in Los Angeles, December 9th

I will be speaking to the 22 Kagoshima tea farmers this Thursday. Still thinking about the focus of my talk; it will include a conversation about the ‘culture of tea’ as a wholistic approach to tea, teaware, history and culture. They want to know what American think of Japanese tea. Any thoughts on...

Re: Yancha issues

Where were the good teas previously from and where are the new overroasted / underroasted teas from?

It could simply be the style of each farm / roaster.

Re: What Oolong Are You Drinking

I've had quite a few of their teas (and have met them personally, great people fwiw). The Gold Medal stands out as being particularly good, but I also like the Premium Rou Gui, the Lao Cong Shui Xian, pretty much all the black teas from above tong mu.

Enjoying - I mean REALLY enjoying - an exceptional Rou Gui from Old Ways Tea. This is one of the finest Rou Gui I've had the pleasure to drink. Extraordinarily long in the mouth.
Is that the Gold Medal one? It is fantastic.

Re: Leafy Green Tea

Sugar White Tea (Chen uses his oolong leaves to produce a white tea. It is divine.) qingxin/青心 cultivar right? i've never had something like that before hm Not quite. Chen has a few cultivars on his farm because they were all planted at different times over the generations. It all comes from his fa...

Re: Leafy Green Tea

How are you steeping Chen’s Sugar White? Will try it soon. We always encourage our customers to experiment with their own brewing due to differences in water / altitude, but... as a baseline we use ~5g for a 120ml pot, water just off a boil, and 5-10 seconds for the first infusion +5 seconds each. ...

Re: Leafy Green Tea

Just an update on Leafy Green - We have added several new teas over the past few months, with a few more coming in the next 1-2 weeks. Anhui Teas -- Keemun black tea -- Keemun green tea (same farm as Keemun black tea, but produced in a mao feng style) -- Wild Mao Feng -- Wild Huo Shan Huang Ya (yel...
