Re: A bit of gossip about TC...
When I talked to the owner when Steve was not responding to my contacts, he informed me that I "won and Steve quit"(w/o notice I later found out). I was puzzled, how did I win? Like I said, there were no winners. What was done really could not be undone. And there was no attempt to right the wrongs...

Re: A bit of gossip about TC...
Chip Thanks for making the exception and giving us a bit more background on the whole sad affair... although I was in the eye of the storm at that time, I did not know the whole history and hearing it makes it even sadder. Anyways, water under the bridge we have a better place now! And big thanks a...

Perhaps a bit of a TMI ... but here goes. The first 11 or so years as TeaChat mod/admin from 2006 onward ... Adagio graciously hosted an autonomous forum and kept hands off 99.9% of the time. They even sponsored an election on the forum allowing members only to nominate and elect the forum's mod(s) ...

Re: A bit of gossip about TC...
I do not generally publicly discuss this, preferring to see TeaForum exist to discuss tea related topics.
... but I will make an exception shortly.

"Breath the free air!" (Gandalf) 20191017_111433.jpg Several rounds of Yokkaichi completed, bag is almost empty. Review forthcoming. I was contemplating opening the much heralded Ippodo Tokusen tonight for tomorrow ... and then I began having possible early onset of a sinus infection symptoms this e...

Re: Inaugural Group Tasting: Sinensis Yokkaichi & Ippodo Tokusen Gyokuro
I've never heard of doing this before, but its interesting. I wonder how it applies to other types of tea as well. And does it mean it needs to be drunk more quickly to avoid degradation. It certainly works as well for high mountain Oolong. Freshly opened is tasting not as nice as the day after, I ...

Re: Inaugural Group Tasting: Sinensis Yokkaichi & Ippodo Tokusen Gyokuro
Which brings up the question, are these nitrogen flushed? Years ago, Ippodo did not but may have changed. I do not think it is as critical to nitro flush gyokuro since it is best when aged at least several months. Sencha on the other hand retains its freshness and intensity generally better when ni...

Re: Inaugural Group Tasting: Sinensis Yokkaichi & Ippodo Tokusen Gyokuro
To hou or to shib ... that is the question! Lid on or lid off to brew? I'll try both shib and houjin for this tasting event. I personally prefer houjin but there is no absolute right answer IMHO. I typically brew gyokuro lid off as do masters in Japan though I am sure it is not universal. 20191011_1...

If you have not done this, please do!
After you preheat your brewing vessel and pour the water off.
... wait about a minute.
Put your dry leaves into the brew vessel and swirl them around gently ...
Smell the warming leaves!
Wondrous!

Re: Inaugural Group Tasting: Sinensis Yokkaichi & Ippodo Tokusen Gyokuro
After 1 day open packet, re-seal with a bag clip or sim and wait +-12hr before using tea. This allows the needles to breath a little before steeping. I've never heard of doing this before, but its interesting. I wonder how it applies to other types of tea as well. And does it mean it needs to be dr...

Re: What Green Are You Drinking
And with the Gyokuro tasting set to begin in a day or two ... and not having brewed Gyokuro since last Winter, I found myself craving Gyokuro! Practice brewing would be helpful as well. Brewed up Yume (not the Yame) gyokuro from O-Cha this morning to start the TeaDay. This selection is a perennial f...
