Re: Chaozhou style brewing: wet or dry?

Hi again M / Teachronicles , Without wishing to personally avoid answering your questions, I feel it's best to point you to the 潮州茶經 (Chaozhou ChaJing / Chaozhou Tea Classic) written by 翁輝東 (Weng Huidong) in 1957. It explains the what's/how's/why's/when's/where's of CZ brewing in great detail. Unfor...

Re: Chaozhou style brewing: wet or dry?

LOL tjkdubya ("Then promptly come back to life and buy it.") Good one! :D re: heft and thickness of brewing vessel, the answer is always "depends" on the tea you want to brew with it. High-fired yancha's and rolled oolongs...thicker. Dancong and qingxiang style oolongs, I'd say light(er) and thin(ne...

Re: Chaozhou style brewing: wet or dry?

Hi M! Teachronicles It’s tradition, yes, but one that was borne out of pragmatism. The only symbolism that’s infused into CZ brewing method is, afaik, the 3 cups used to signify the character 品 (and it’s meaning). Will respond soon in detail to your other good questions! For now, and in very general...

Re: Chaozhou style brewing: wet or dry?

@Bok, thank you for the clarifications! Helps me tremendously to understand better.

That tea seller in CZ, pouring with a gaiwan without spilling...that’s quite a feat, isn’t it?

I hope one day we can meet. Very much love to learn dry brewing method in detail 🙏🏻

Re: Chaozhou style brewing: wet or dry?

Hi Bok , Thanks for starting a thread to continue where we left off. Is there any online vid that fairly represents how dry CZ brewing method is done per your description? I'm honestly curious, and it's because I don't quite understand what you mean by: "tries to avoid splashing water everywhere as ...

Re: Introduce Yourself

Hi Bok , Thank you! I forego using fairness cup most of the time. For me, it depends on how far or close apart everyone is seated away from me, if I'm brewing. I use a fairness cup if I think it's inconvenient for my guests to have to stand and reach out for their cups. Re: dry vs wet brewing, I'm n...

Re: Introduce Yourself

Hi! I've been mostly a lurker in here. I look forward to participating in discussions more and to getting to know everyone here better. Used to be more active within the tea blogosphere and tea fora before kids, including on Teachat, occasionally. My username on Teachat was Phyll . After a period of...

Wow, phyllsheng powerful comments and image. Exactly how I feel about Emu. Your capture speaks volumes. Speechless.
Thank YOU, @Victoria!
I had to ask you for a magnifying glass, and took my time staring at all the details of that Jozan IV teapot :geek: :D

Re: Yamada family seal chops and signatures

+1 for Asako Isobe. She is incredibly friendly and helpful. I think pedant is correct on all points. While I enjoy using Jozan III kyusu and appreciate their craftsmanship, I feel that Emu Yamada (Jozan IV) is next level . I haven’t used Sou’s kyusu but I hope he took the same approach as his fathe...

Re: 1980's 8582 "Thick Paper"

Perhaps you will say if these are some the 80's teas I've experienced then it is no wonder why I'm not more excited to discover this EoT offering. :) Or perhaps the teas look fine and it simply comes down to personal taste preference. I know both vendors. Daniel Lui and M. Erler are knowledgeable a...

Re: 1980's 8582 "Thick Paper"

Hello! I hope I am able to infuse some perspective to this interesting discussion about the mid-1980's 8582 that EoT offers. Firstly , to address Shine Magical’s initial comment: I've had about 6 1980's sheng (supposedly), but they cost somewhere between 5 to 12$ a gram. How old a sheng pu’er is has...

Re: Bonavita Electric Kettle at Teavana 50% Off Plus Free Shipping

Thank you for relaying the message @pedant. When it happened to my Bonavita 2 years ago, I was lifting the kettle up and the handle just broke right off entirely...top and bottom parts were detached at the same time. The kettle fell from about 4ft onto the floor, the the lid that was properly and ti...

Re: What Oolong Are You Drinking

Charcoal roasted DYL? That's.....unusual. How did you find it? I haven’t asked for DaYuLing from him or anyone else in a few years, too many let downs. LiShan has been richer and better for pockets. You ? This was the last of this particular DYL from him and enjoyed it as much as I have each time be...
