i've had wagyu teppanyaki style before, yeah. pretty tasty.
also an fyi: shabu-shabu is an onomotapoeic term referring to the swish-swish noise of swishing the ingredients around in the broth.

i generally just use a plain old impulse sealer for tea instead of a vac sealer. a lot of teas (particularly non-ball-rolled ones) get crushed by the atmosphere when you vac seal, and the actual seal you get is often not as good as on dedicated impulse sealers. also, you lose the benefit of using al...

i just got back to the US and need a little time to readjust and get my thoughts and pics together, but i have some good stuff to post. More tea followed me home but I only realized as I was unpacking that the cute little containers I bought at Obubu Tea Farm were empty tins, sigh. :x that's a drag....

rinsing feels mostly wasteful now to me. sometimes I do a light first infusion (steeping for a moment longer than what would constitute a rinse) and savor that for a sec while I wait for the leaves to open a little. or if i don't care about letting the leaves open, i just make the first steep longer...

also i went to the Robert Yellin Yakimomo Gallery. beautiful place, certainly worth a look. i met Robert there, nice guy. he didn't have kyoyaki or kyusu though just fyi, so if that's what you're mainly interested in seeing, maybe take that into account if you have limited time in kyoto

not a lot of them, ethan. it seems like there's a handful of higher end kyoyaki stores, and they have similar inventory. so if you want something, it's a matter of picking out your favorite from the 1-3 that each store has. antiques on the other hand... i saw some ridiculously intricate stuff, seemi...
