Re: Yixing Production Mold Slab Process

Interesting to see the work that must be done carefully and thoroughly through the steps. Its not just like pouring cake batter into a pan as some people seem to think. Thanks for post.

Re: What Black Are You Drinking

I also had a conversation about Ruby Jade 18, although it was only with myself as I used the last leaves of what I bought 14 months ago. Mostly I wondered about variations in quality and characteristics of the a particular tea. Going through the differences, what day tea is harvested, what time of d...

Re: What Oolong Are You Drinking

Interesting what you write about the hybridization of Indian tea, Joel. The Ruby Jade 18 (black tea) that I drink has been featuring flavor & notes similar to your description of that oolong. Cheers

Re: What Oolong Are You Drinking

Snac told me that they categorize by quality of the finished product. Obviously, the best teas start with the best leaves. Many people equate the best leaves with the highest farms, as we know; so, often height gets mentioned. I assume that if tea is destined for the best care through all of its pro...

Re: What Oolong Are You Drinking

Very interesting in this case that the two teas I sample are from exactly the same farm, same spot etc, only difference is that they where harvested on different days! I would have never thought that the difference could be that big... if I did not know better, they seem like two different teas. Dr...

Re: What Oolong Are You Drinking

That sounds delicious, Jay. What you say about resting roasted teas is interesting. I am finding that rest has quite an effect, enough effect that I am disregarding what I had written about preparation. Not all of my roasted oolongs have benefited from rest as they seem overly dominated by their cha...

Re: On brewing tea thick

Leaf to water ratio seems crucial to me. Sweet or bitter notes that may add character or charm to the drinking of a brew made with a modest amount of leaves; while being heavy with leaves may lead those notes to stop being subtle and dominate the palate. I've often had friends enjoy a tea prepared b...

Re: Samples for sale, only here:

The HOR is from late summer 2015. I don't know whether it is I or the tea that changed in the 2 years that I have had it. I do know that I used to steep it for 2 minutes in boiling water but now steep it for 30 seconds or so in slightly cooler water (about 95C). The HOR's flavor seems the same to me...

As you probably have guessed, I am a bit eccentric (to be kind to myself) or neurotic (if one is not so kind) which manifests itself is some aversions, one being taking photographs., Nonetheless, I like photographs and am grateful to see the HOR in such a good picture, thanks Victoria. Re: Vacuum sealers?

One can squeeze pouches and packets at the top of the tea and clip the sides tight (paper clips work). There will be more air inside than a vacuum pack would have in it, but not too much air for most purposes. When I get tea to someone, I like to think it will be tried soon, not stored away, possibl...

Re: Clay Kettles

That kettle fulfills a major feat for teaware which is giving pleasure to its owner. When we feel or know that a kettle gives us better water and like having it in our hands and view, our routines make us happy. Cheers

Re: What Black Are You Drinking

Enjoying a Ruby Jade #18 bought last year in Taiwan. Excellent and satisfying; not very complex but represents the work to create a unique, tasty tea from Sinesis and Assamica very well. Still the best #18 that I have tried. Vacuum packs kept this tea new, exactly as it was a year ago.
