Re: Boiled tea flavour

There is a historical tradition of simmering tea. In fact, sencha, means "simmered tea". At this time in Japan tea was seed grown and did not have genetics from assamicas that contribute to aromatic but more bitter teas. A hillside might be picked at various times from bushes of various genetics, r...

Re: What Green Are You Drinking

Gyokuro Suimei from Den's Tea, cold brewed (parameters: 10g leaf to 500ml water, brewed in a large mason jar on the counter top for 3 hours, strained and refrigerated) Absolutely lovely, less sharp than if I had brewed it hot, and sweeter too. Seaweed umami comes through very nicely, coats the tong...

Re: Does anyone believe anyone any more?

Your story hits the head of the tea drinking paradox that while world over, drinking tea is commonly a social experience, the closest I usually get is drinking it in the company of others drinking coffee. That your company even tried loose leaf tea without sweetener never mind a second steep is a ho...

Re: Tea preferences for super taster/ normal taster / hypo taster

'Hypotaster' category describes me to a T. Fascinating that physical characteristics of taste sensing structures could account for correlation with one of the 3 groups. Equally intriguing is the role that familiarity of any particular flavor may play: in Alaska I witnessed an indigenous colleague ro...

Re: Tips for a beginner? (Switching from coffee)

Maybe I am missing something, But is Japanese umami a flavor profile or is it a type of tea? I checked out those sites and didn’t see a category called umami, but I see it listed within the profile of some of the selections. (I also recognize umami from food channel viewing 15 years ago when they t...

Re: Tips for a beginner? (Switching from coffee)

The electric kettles that we are discussing are used only to heat water. You would never use leaves in them. They’re not designed for straining the leaves, or being cleaned easily afterwards. Re: Tips for a beginner? (Switching from coffee)

I know that when first discovering the world of tea the scale of what you don't know is overwhelming. A comprehensive guide answering your question could easily constitute an entire book. Rather than a definitive answer, random aspects of my experience might be encouraging. Unpredictability is the e...

but the earth could be round too, and you won't find me believing that anytime soon! Lucky that science does not need belief :) Lucky for science. As for humans, I wonder if nature wouldn't prefer its bounty of DNA variation to not include the human kind. Ignoring science might be a good way to fin...

A little information here: https://www.teachat.com/viewtopic.php?t=12042 Known for leeching minerals into water I guess tea flavors made with it would be extremely idiosyncratic and highly specific to particular teas and waters. Probably rules out the Japanese steamed tea family. Citrus and floral n...

Re: jade teaware

Often lack of discussion is related to the demographics of the writers -- it is a common misconception that the internet is a representative sample of global culture, including global tea-culture. Sometimes the reason why there isn't discussion of a tea-culture is because there simply isn't anyone ...

Turns out it was "muyu stone" rather than jade. So same question but for muyu stone instead of jade.

jade teaware

A friend asked about a jade tea set he has. The absence of discussion about jade for drinking tea suggests it is just ornamental at worst, or, can serve as a relatively neutral medium like porcelain or glass, at best. Knowledge about jade is a specialized area all on its own, never mind for use as t...

Re: Your day in tea

Guess I'm not alone because sencha is my first steep of the day too. If subsequent events go well, it's due to the positive inertia inducing power of sencha fueled umami. If they don't, well, it had nothing to do with the tea!
