Re: A single cateogory of tea is such a rabbit hole.
Yesterday I found out that not all white teas were baked. This months after "finding out" that white teas were baked. Now I've understand that while you can bake white teas you dont have to and it affects the flavor and how the teas will change over time. Baked teas, especially charcoal baked will ...

Re: A single cateogory of tea is such a rabbit hole.
I've also seen a few charcoal-baked white teas and have wondered how this process affects the leaf and whether it's worthwhile. I don't imagine people want smoke in their white tea, but maybe I'm wrong. It's also possible that the baking is subtle enough that it doesn't leave any smoke. Well good m...

Re: A single cateogory of tea is such a rabbit hole.
I have a 2015(?) Fuding Yinzhen that I suspect was lightly baked because it has that warm freshness to it, doesnt havent the typical "hay" or green bean character which I dislike in white tea. Instead, the baking preserves the freshness - i didnt detect any herbal aroma that comes from ageing despi...

Re: Green Tea Vendor Topic
I think the big problem with ming qian is that its used on teas that it shouldnt be. the qing ming cut off date is really for BLC and long jing, but other people have tried to applied this teas. For example I see talk of Pre Qing Ming Huang Shan Mao Feng, but in the core region the first picks of he...

Re: Did you know white tea can have a piling step
As some have mentioned this is different from the piling of browned tea and produces normal white. btw, I dont think the browning happens as much as some people think it does. When I've asked makers about it they have told me they have some and let me try it, but I think there is no shortage of natu...

Re: Green Tea Vendor Topic
Thanks for the BLC recommendations. Is your BLC Mingqian? I know TXS and Hojo also have BLC, though I'm not sure how early it's picked. None of these vendors carry Anji.
Yea, so I actually seperate the pickings by the day. So you can choose exactly what day you want and even compar...

Did you know white tea can have a piling step
I was talking with a maker in Dian Tou and he mentioned a piling step. We were speaking in chinese so I had to double check i heard correctly but indeed he did. When i went home I even found a study about it. https://www.sciencedirect.com/science/article/pii/S2590157524000269 When i asked other make...

Re: Green Tea Vendor Topic
To my knowledge, Canada has imposed a 25% tariff on everything coming from the U.S., where Seven Cups is based, so any tea coming from other countries, including China, shouldn't be taxed. Basically, I'm looking for a non-U.S. company with good BLC and Anji Bai Cha. Does anyone know if the ...

Re: Wuyi Hype
I've been thinking about old trees yan cha recently. Recently I saw a video from a guy who was drinking an old tree yan cha and talking about it like old tree yan chas are better. This has been the opposiute of my personal expirence. When I go to Wuyi I often get shown old trees - Lao Cong- with a d...

Living in the white tea region has me thinking about pickings and quality
Teaser: Leaf picking is not quality. Leaf picking is simply the material a tea maker uses. The quality will be determined by the terroir those leaves came from, the weather the day of the making, and the skill (and luck) of the tea maker him or her self. https://sweetestdew.com/blogs/tea-educati...

Re: Green Tea Vendor Topic
I discovered Seven Cups last year and really enjoyed their green teas. In fact, their First Pluck Bi Luo Chun was one of my top five teas of 2024. However, with what's going on in the States right now, I'm not sure I want to order Mingqian teas from them this year and risk getting hit with tariffs....
