I always use the same temperature for each infusion since I find that increasing the temperature for later infusions tends to draw out an unpleasant straw like flavour from sencha.

The temp I use is....when holding my hand to the side of the kettle starts to feel uncomfortable.

You could give Matcha Manten from O-cha a try if you want to try koicha grade matcha.

I've been drinking pretty much only Matsu no Midori from Maiko tea for a while now it's a relatively affordable sweet balanced matcha. Kotobuki is a higher end relatively sweet matcha also from Maiko tea.

I think that the ideal temperature to drink tea is only slightly above body temperature. Tea should feel pleasantly warm but never painful. That's about 40°C (104°F). The mucosa in your mouth and throat is more delicate than your skin and it can be easily damaged by drinking things that are too hot ...

Spearmint tea from Dragon Tea House. This has a really intense fresh flavour and I like that it's the whole dried herb rather than the finely chopped leaves of most spearmint teas I've tried before.
