Baicha Longjing

For those like me who love both Longjing and Anji baicha, this Baicha Longjing is a beautiful discovery. Produced in Xiaojiang (Xinchang , Zhejiang) at an altitude of 800 m above sea level, its name is due both to the albino cultivar of the tea plants from which it comes (“Bai Ye 1 Hao”, the same us...

May I ask where you got that tea? Did you source it or did you buy it from a company.
I have found it travelling in China few years ago... I have been lucky because I really love it!

A lovely Fuxi Guyu Maofeng

I love the Yellow Mountain green teas and this is one of my favourites. It's a Huangshan Maofeng from Fuxi and it’s called “Guyu” because of it‘s harvested between 21 April and 5 May. The dry leaves have a strong vegetal fragrance found in different Anhui green teas and a lovely floral note of osman...

Re: Kogane midori

Bai Cha or Bai Ya Longjing is great! It's produced by the same cultivar used for Anji bai cha "Bai Ye Yi Yao" (Bai ye No.1). The version I had the opportunity to taste I think is not sold on the market, so it's not easy to get  . It would be useful to know the working process, with or without s...

Kogane midori

Time ago my friend Nori offered me a special sencha handmade by him in Morokozawa, called "Kogane midori". It's a rare albino cultivar and its production is really really limited every year. To allow the leaves to remain yellow it's important not to cover them during their growing; the sun has an im...

Re: Japanese Green Tea: Aged, Roasted, Fermented

During a tea tasting a friend show me this tea saying "Let's try it, it's a special sencha". And it was... floral, fresh, umami... So my friend told me "It's from 2001 harvest! I forgot this sample for years..." showing me the package "Sencha Yabukita 2001". What do you think about it? I had great ...

Re: Kori Dashi: what is your favourite cold brew Japanese green tea?

I'm actually cold brewing some fukamushi right now except I do it with room temperature water for 2 hours and then pour over ice. Fukamushi is a great tea for cold brewing due to the fact the broken up leaves infuse more quickly and the sweetness and umami are amped up. So you add ice only to have ...

Re: What Green Are You Drinking

I enjoy Life in a teacup Pre-Qingming Shi Feng Long Jing, fresh and rich tea. I have drunk it a couple of days I go, I posted some pictures on my profile. Do you know the cultivar? The one I had was really good because of the roasting was not too strong, so the it had chestnut aroma but it was also...

Kori Dashi: what is your favourite cold brew Japanese green tea?

I'm pretty new with this method but I like Fukamushi Sencha using 4 or 5g of leaves covered by ice for 2 hours. I get a really strong and umami tea cup without bitterness. And you?
I use a borosilicate glass teapot...
