Even if the tea is just "marinated", it sounds like it's going to be overly sweet, at least in the first infusions. But who knows, maybe it'll pair well with a roasted TGY.

As far as I know it's done so every guest can choose how strong they want their tea. Not much point in doing it if you're drinking alone - unless, as you said, you oversteep and need to dilute the tea a bit. I recently saw a video that suggests that gaiwans are made only from porcelain but I know that isn't true because I've seen clay gaiwans for sale. The one time people described pu'erh as fishy to me they actually meant stale. It wasn't even that, though, rather it was a 10 year old shu with a very strong storage smell. Followed Victoria's advice and went with 6g and 42-50°C. I used Acqua San Bernardo, which, whilst not perfect, was definitely an improvement. Still a lot of umami but not as overwhelming as before. More grassy notes and definitely something sweeter, especially in the last infusion.
