Even if the tea is just "marinated", it sounds like it's going to be overly sweet, at least in the first infusions. But who knows, maybe it'll pair well with a roasted TGY.

As far as I know it's done so every guest can choose how strong they want their tea. Not much point in doing it if you're drinking alone - unless, as you said, you oversteep and need to dilute the tea a bit. I don't know if it's done at restaurants as well, though if everyone at the table is having...

I recently saw a video that suggests that gaiwans are made only from porcelain but I know that isn't true because I've seen clay gaiwans for sale. Followed Victoria's advice and went with 6g and 42-50°C. I used Acqua San Bernardo, which, whilst not perfect, was definitely an improvement. Still a lot of umami but not as overwhelming as before. More grassy notes and definitely something sweeter, especially in the last infusion.
