Re: Steeping Question
Time is not a substitute for temperature which is not a substitute for amount of leaf (and vice versa). That is, you can't really compensate for a lower temperature by brewing longer, since what gets extracted and how quickly is largely dependent on how hot the water is. And adding more leaf, but st...

Re: What tea strainer do you use?
When brewing casually for myself, I don't filter. Doesn't matter which tea it is. When tasting or brewing for others, I might, depending on the kind of tea - it mostly comes down to how broken it is. Doesn't stainless steel affect tea taste? I was thinking of buying those but was afraid that it migh...

Re: Sheng and Shu Pu Erh - Alcoholic?
I am a big fan of Pu Erh tea and I drink lots of the Shu (ripe variant). Does Pu Erh Tea (particualrly Shu) contain any alcohol due to the fermentation process? Short answer: No. Longer answer: It's not actually fermented. That term is mostly used due to lack of anything better in the English langu...

Re: green tea/matcha powder?
Matcha will always say matcha on the label/product description, in my experience. It's a very specific tea & process (specific cultivars, shaded ~3 weeks before harvesting, steam fixation, fine grind using special equipment, ideally factory-sealed in high-quality container). I don't think you can g...

Re: A good site for Indian teas (and Japanese)
The other one is Japanese teas. It was listed here somewhere that Yuuki Cha is a good site. For the overall quality is that good site to buy from? I'd like to ask before I do. Any others? Thanks! For sheer size of the selection, Yunomi.life is hard to beat. Of course, that also means it can be rath...

Re: Anyone tried storing pu'er cakes in Danish butter cookie tins?
They would have to be some high-quality tins, to be useful for longer-term storage. Most likely the seams have simply been crimped, and not welded, together, so plenty of opportunity for the humidity to leak out.

Re: What is your favorite caffeine-free tisane?
In my experience, red rooibos always has the same flavour, with the main difference being where on the delicate-robust scale it is. Wild rooibos tends to be less delicate.

Re: Lipton teas
But can drinking very concentrated/strong cold brew black tea even at this cause gastric problems in some people? No idea, but if there's a risk, I'd say it's going to be a lot lower with cold-brew. Also, going with something higher quality - and less broken - than Lipton will likely also diminish ...

Re: Freezing during shipping? Is it bad
Tea, being as dry as it is, shouldn't suffer any direct harm from freezing. The only two potential issues, that I see, are risk of condensation when bringing it back to room-temperature, and that the enzymes and microbes might have been killed, leading to poor ageing-potential. Limited condensation ...

Re: Lipton teas
Not sure why anyone would want to use Lipton tea  Just like with coffee, temperature has an impact on how efficiently various compounds are extracted in tea. With tea it mostly affects the bitter flavours, with colder water giving less bitterness and astringency. Cold water also tends to de-emp...

Re: What's in Lipton Teabags??
I also imagine that this might cause issues with certain countries' labeling requirements -- how do you label "tea-flavored tea"? :D Doubtful. First of all, it sounds like the essence is added back to the same batch of leaves it came from and so would never be considered an additive in any way. Eve...

Re: What's in Lipton Teabags??
While it originally was (mostly?) Ceylon tea, today the bulk of the blend is from Kenya. According to Wikipedia , Yellow Label is blended from about 20 different teas, but this PR article says up to 40. Also, in 2014 they changed the process , pressing the leaves to extract "tea essence" and then ad...
