Hosen sencha from ippodo, wonderfully balanced sencha, a little under the weather right now, I have concluded that there is nothing better when sick than a nice sencha! I highly recommend!

Re: What Oolong Are You Drinking

And: wait, he is now wholesaling tea? He said he had a new venture that would be launching in a few months.....although that was quite a while ago. And sure enough, there is a new Norbu web site. Re: What Oolong Are You Drinking

Today was finally cool enough for hot midday tea. I'm enjoying some of Norbu's Red Alishan, which I've drunk quite a bit of as cool-brewed sparkling tea lately, and it's a delightful reminder of what a wonderful tea this is, with that lovely spicey/earthy note I adore, which is missing when the tea...

Re: What Oolong Are You Drinking

I have been on the search for a good Anxi oolong source that sells something besides TGY. I was originally looking at Verdant Teas, but for some reason I have never been drawn to their teas for some reason. I finally remembered that So Han, down the street from me in Austin, TX, sources Anxi oolong...

Re: How to explain pleasant bitterness

Bok you make a wonderful point, the pleasant bitterness is not pleasant because it's a different sort of bitterness but because of how it's balanced with the other notes, once again it appears to me balance is the key to all things, thank you for the wise words from the tea maker and thank you for ...

Re: How to explain pleasant bitterness

Thanks for the responses @OCTO and @mbanu!

That's a good point about astringency vs bitterness!!

That's a really good point about the language we use about bitterness!

Thank you both!!

How to explain pleasant bitterness

I was recently talking with a friend about how they should try sheng. One of my reasonings being the complexity and the interesting factor of pleasant bitterness in good young sheng. They looked at me with a puzzled look and questioned me on how something could be bitter and pleasant I began to try ...
